Elf on the Shelf Day 23 (only 3 days left!) and a recipe

Another busy day yesterday, but I did manage to deliver all 23 teacher gifts to the kiddos’ school. I remember mom doing this as a child, but I don’t recall all the time she (no doubt) took to do it. She traditionally made and delivered pounds and pounds of fudge to our teachers, our neighbors, the delivery man, her friends, my dad’s office mates, the bus drive, the random guy on the street and anyone else she felt needed some. I tried making it for my brothers a few years back and it just wasn’t the same (and also the reason why I make mustard). As my gift for the holiday season, I am spreading my mom’s love by sharing her recipe. Hopefully someone else can replicate the gooey-goodness that was a Christmas tradition in our house.

Nana Cat’s Amazingly Delicious Fudge

2 tablespoons butter

2/3 cup undiluted evaporated milk

1 2/3 cups sugar

1/2 tsp salt

2 cups (4 oz.) mini marshmallows

1 1/2 cups semi-sweet chocolate pieces

1 tsp vanilla

1/2 cup chopped nuts

Combine butter, milk, sugar, and salt in saucepan over medium heat. Bring to boil. Cook 4-5 minutes, stirring constantly (start timing when the mixture starts to “bubble” around the edges of the pan). Remove from heat. Stir in marshmallows, chocolate, vanilla, and nuts. Stir vigorously for 1 minute (until marshmallows melt and blend). Pour into 8-inch square buttered pan. Cool. Cut into squares. Make about 2 pounds.

See? Easy. But my Mom had the magic touch. Mom’s fudge tasted better because it was made by her.

So… on to Elfred. With all the hustle and bustle of the season, I am more and more stressed distracted. A special thanks to Tina for texting me an elf reminder so as I did not receive the Mother of the Year (MOTY) no-prize again today. Here’s Elfred hanging out near the TV so he can get a better look at the kids.
